Cheddar Scallion Potato Cakes

This is an old southern dish I remember growing up on. My grandmother always made these with leftover mashed potatoes if there was any lol..and she always made these in many different variations and flavors. This is one of my versions and variations I love the best.

This is an old southern dish I remember growing up on. My grandmother always made these with leftover mashed potatoes if there was any lol..and she always made these in many different variations and flavors. This is one of my versions and variations I love the best.

In a large mixing bowl make the instant potatoes according to package directions. Once done cover with plastic wrap and let cool in fridge for bout 20-30 minutes.

Remove from fridge and uncover plastic wrap. Add rest of ingredient. Mix well with clean hands or you can use a sturdy spatula. Once everything is combined well. Divide into portions. Form portions into discs to make the potato cakes. If need to coat hands with extra flour before shaping the discs. Once all the discs are made. Set aside.

In a large skillet on medium low heat add 4Tbsps. Vegetable Oil. Once skillet is hot add potato cakes a few at a time. Fry til one side is golden brown bout 5-6 minutes. Flip and finish cooking til the other side is golden brown and the cakes are completely heated and cooked through for another 5-6 minutes. Transfer to a paper towel lined dish to help soaked up some of the oil. Set aside.

Repeat til all the cakes are made. Once they are all done while still warm serve immediately and enjoy 😊.
Tips
I sometimes melt some butter in a small dish with some mince garlic and parsley and brush the mixture over each potato cake before serving. Gives it a whole new level of deliciousness.
