Ingredients

2 loaves
  1. 3 cupsbread flour (about 375 grams, 11% protein)
  2. 2 teaspoonssalt (about 10 grams)
  3. 1 cupwarm water (about 250 ml)
  4. 1 1/2 teaspoonsactive dry yeast (about 5 grams)
  5. 1 1/2 tablespoonsextra virgin olive oil (about 20 ml)

    Mix the warm water with the dry yeast, stir, and let sit for 2 minutes.

  2. 2

    Add the flour, olive oil, and salt. Mix until well combined and the flour is fully hydrated.

  3. 3

    Cover and let rest for 30 minutes.

  4. 4

    With wet hands, fold the dough 10 times from the outside in. Cover and let rest for 30 minutes.

  5. 5

    Repeat the folding and resting process two more times (let it rest 45 minutes after the last fold).

    Turn the dough out onto a floured surface, divide it in two, and gently twist each piece.

    Place the dough on a baking sheet lined with parchment paper. Preheat the oven to 480°F (250°C).

  8. 8

    Place a bowl with ice on the lower rack of the oven. Put the loaves on the middle rack.

  9. 9

    Bake for 10 minutes at 480°F (250°C). Lower the temperature to 420°F (215°C) and bake for another 12-14 minutes.
