Mix the warm water with the dry yeast, stir, and let sit for 2 minutes.

Add the flour, olive oil, and salt. Mix until well combined and the flour is fully hydrated.

Cover and let rest for 30 minutes.

With wet hands, fold the dough 10 times from the outside in. Cover and let rest for 30 minutes.

Repeat the folding and resting process two more times (let it rest 45 minutes after the last fold).

Turn the dough out onto a floured surface, divide it in two, and gently twist each piece.

Place the dough on a baking sheet lined with parchment paper. Preheat the oven to 480°F (250°C).

Place a bowl with ice on the lower rack of the oven. Put the loaves on the middle rack.

Bake for 10 minutes at 480°F (250°C). Lower the temperature to 420°F (215°C) and bake for another 12-14 minutes.
