Blend Coconut, green chilies and ginger in a dry grinder, about a minute.

Soak Basmati rice in a the rice cooker bowl with 4c water for an hour. rinse a few times. add 2 1/2c water and 1tsp apple cider vinegar. add 1tbsp butter or oil. close the cooker with the lid. Turn on the cooker, You may stir occassionaly the the cooking rice. when rice is cooked, cooker will turn off. Let the rice cool about 15minutes. Add turmeric. mix

Pop mustard seeds in hot oil in a skillet over medium heat, about a minute or two. Add asafoetida, urad, chana dals, fennel seeds, curry leaves-about 1 minute. Add blended Coconut, green chilies and ginger; continue cooking- 1-2 minutes over medium heat. transfer tp the cooker bowl with the rice, Mix. salt to taste.

Do not serve immediately. Let the ingredients blend together for 30 minutes. transfer to a bowl, Dry roast the cashews in a bowl in a microwave. transfer the roasted cashews to the coconut rice in the bowl. You may serve with papads, chips or stirfried vegetables

Tips always soak the rice at least for an hour and rinse a few times to get rid off the phytic acid. Phytic acid is not good as it will prevent absorption of mineral nutrients, Do not overcook rice. using rice cooker is good for making rice with right consistency
