King Charles’ Baked Eggs à la Med

This little pot of delight is knocked up in 5 minutes and bakes in 10.

Whilst our dearly departed Queen loved chocolate, her son loves cheesy eggs. This recipe is from Clarence House and is one of King Charles favourite breakfast dishes.

‘A la med’ is often used to describe Greek or Mediterranean-style food, specifically referring to a Mediterranean-style (à la méditerranéenne) culinary approach and, since it’s a beautiful sunny day, I have used ingredients from Southern Europe.

Traditionally made with spinach, tomato, egg, double cream, basil, Tunworth and Old Winchester cheeses, I’ve given it a Mediterranean uplift and added to the spinach, egg and basil, Kalamata olives, salted ricotta, crème fraîche and parsley and topped with Parmesan.

Ingredients

10 minutes
1 person
  • small handful wilted spinach
  • few chunks salted ricotta or feta or other soft cheese
  • 5Kalamata olives
  • 1large organic egg
  • 2 tbspscrème fraîche
  • few small leaves fresh basil and parsley
  • freshly grated black pepper
  • 2 tbspsgrated Parmesan or other hard cheese

Steps

10 minutes
  1. 1

    Line a ramekin with wilted spinach, making a small well in the centre. Place the chunks of salted ricotta and olives on top of the spinach. Crack the egg in the centre being careful not to break the yolk.

    Spoon the crème fraîche over and season with black pepper. Add the herbs. Sprinkle with grated cheese and bake in the oven 180°C fan for 10 minutes. Grill for 2 minutes to brown the top. Let it stand for 5 minutes. Serve with toast.
