Strawberry Mochi (いちご大福)

These are one of my favourite sweets. Feel free to replace the strawberries with other fruits, like tangerines, banana, kiwis, etc.

Steps

Wash the strawberries and pat them dry with a paper towel. Set aside.

Roll the koshian into balls and set aside.

Whisk the glutinous rice flour and sugar before slowly incorporating the water.

Microwave covered for 3-4 mins, and give it a mix with a wooden spatula. Microwave for another minute.

In a shallow wide pan, generously sprinkle the potato starch and put the mochi dough. Sprinkle with more potato starch.

Spread the dough flat to the corners of the pan and cut into six equal pieces.

To make the daifuku, place a koshian ball and flatten into a disc. Add the strawberry on top and mould the koshian around it, leaving the tip exposed.

Take one piece of mochi dough and place the covered strawberry tip-side down, and mould the mochi around the strawberry. Roll into a ball gently.

Repeat for the other daifukus, placing them in a bed of potato starch to prevent sticking.

Serve immediately and enjoy! Do not refrigerate them as they will dry out.
