Ingredients

45 mins
8-12 Slices
  1. For the Cakes:
  2. 225 gSalted butter at room temperature
  3. 225 gsugar
  4. 4eggs Medium free range
  5. 2 Tbspespresso coffee strong
  6. 1 tspespresso powder
  7. 225 gAP flour
  8. 3 TspBaking powder
  9. 50 gwalnuts roughly chopped
  10. 1/4 TspSalt
  11. 1/2 TspWalnut or Hazelnut Extract (optional)
  12. For the Buttercream Filling / Topping
  13. 140 gUnsalted butter - room temp
  14. 1 pinchsalt
  15. 500 gIcing sugar
  16. 4 Tbspespresso coffee strong
  17. 9Walnuts - To decorate
  18. 2 TbspAmaretto to add to each cake when cooling (optional)

Steps

  1. 1

    Heat oven to 180c. Line 2 x 20cm cake tins with baking paper and lightly oil the sides (I use spray oil)

  2. 2

    In a stand mixer - add the butter and sugar and cream together until pale colour. Add the eggs and combine.

    Weigh all the dry ingredients in a bowl and then sieve ontop of the butter mixture. then use a spatula to combine and no lumps then add the coffee and walnuts and again gently combine.

    Divide the batter into the 2 tins and bake for 30 mins until golden brown (tooth pick comes out clean.) then turn off oven and leave door ajar for 5 mins. Remove and leave tin on cooling rack for 20 mins. Then turn out and let fully cool.

    Cream the butter / icing sugar and coffee together until smooth. Put on cake on serving plate then add the Amaretto (optional) and Half the Butter cream and even out to about 1 cm from the edge. Then add the rest of amaretto to top cake and place ontop Push down gently.

    Spread the rest of the butter cream ontop - this does not need to be piped - its english and a little rustic. Decorate with the walnut halves. Can put in fridge or serve immediately. - Happy Birthday Mum - ENJOY :P

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
