Ingredients

  • 1 lbground beef
  • 1yellow onion, diced
  • 12 ozenchilada sauce
  • 2 tspground cumin
  • 1 tspgarlic powder
  • 1 tsppaprika
  • 1/2 tspsalt
  • 1/2 tsppepper
  • 5corn tortillas, cut into strips
  • 15 ozblack beans, drained and rinsed
  • 15 ozcorn

Steps

30 minutes
  1. 1

    In a skillet with a little olive oil, cook onions until translucent.

  2. 2

    Add ground beef and cook until done.

  3. 3

    Add corn, beans, spices, enchilada sauce, and tortilla strips.

  4. 4

    Stir and cook until bubbly.

  5. 5

    Add cheese and green onion.
