I made this for my teething baby to help him feel better. But it was so yum, I ended up eating half of it and I had to make another batch. guilty mom

Blend pomegranate (with the seeds), mint leaves, and lemon juice. Strain after.

I didn't add the sugar for this batch since it was for my son. It tastes fine, but those who are used to sweeter treats can add sugar.

Over medium heat, bring this mixture to a boil.

Pour into a freezer-friendly dish. Carefully place in freezer and freeze until solid, about 4 hours. It's good to scrape in between with a fork when it is semi frozen. It makes it softer.

Once it's set. Use a fork to scrape into large crystals and spoon granita into chilled glasses. Serve immediately.
