Banana Fritters (Baale Nuruk)

This dish is nostalgic, found mostly in Coorg homes, every monsoon season grandmother and amma used to make Baale Nuruk paired with piping hot coffee.
Delicate mixture of Rice flour and yellow ripe bananas with sesame seeds creates this melt in the mouth sweet dish.
Banana Fritters (Baale Nuruk)
This dish is nostalgic, found mostly in Coorg homes, every monsoon season grandmother and amma used to make Baale Nuruk paired with piping hot coffee.
Delicate mixture of Rice flour and yellow ripe bananas with sesame seeds creates this melt in the mouth sweet dish.
Steps

Take the 5 ripe bananas and mash them with your hands or back of a fork. Tip : Roll the bananas between your hands to make them soft.

Once the bananas are properly mashed, add jaggery,salt, sesame seeds, cardamom powder and mix with your hands. [ It's gonna be messy ;) ]

Once thoroughly mixed, add the maida 1 tablespoon at a time until the mash is little more firm

Taste the mash and check for sweetness and salt.

Add grated coconut and mix well.

Add the Rice flour in batches, until properly mixed. The mash should be sticky and less "watery".

Mix the coconut and the vegetable and slowly heat it.

Test the temperature of the oil by dropping a small portion of the mash.

Take small amount of oil (not the one that's being heated) and place them in a small container, take a metal spoon, dip it inside the oil and then scoop the mash and slowly drop into the heating oil. When dropping the mash, swivel the spoon so as to make a circular motion. This allows the fritters to turn up nice and round which makes them cook evenly.

Always keep an eye on the oil and keep basing the oil to the fitters, once the fritters are dark brown take them out and place them in a hot case lined with tissues. Make sure you use a slotted spoon to fry the fritters.

Cook in batches of 4-5 fritters per round, this way all the fritter balls take similar time to cook.

Once all are cooked, lightly dust it with Icing sugar, this way it melts onto the hot fritters and i know your mouth is already watering and you're itching to try this recipe out.
