Ingredients

2-helping
  • 2 Tablespoonsolive oil
  • 1onion , chopped
  • 3 clovesgarlic , minced
  • 7carrots , peeled, chopped {medium sized }
  • 1 teaspooncumin
  • 1 teaspoonturmeric
  • 2 teaspoonscoriander
  • 1/2 teaspoonpaprika
  • 1/4 teaspooncinnamon
  • 2 cupslentils water , rinsed until runs clear
  • 1 - 15 oz canstomatoes diced
  • 6 cupsvegetable broth
  • to tasteSalt pepper and

Steps

  1. 1

    Heat olive oil in a large pot over medium heat. Sauté the onion and garlic until soft and then add the spices. Add the carrots and sauté until carrots are tender about 10-12 minutes.

    Add the vegetable broth, diced tomatoes and lentils and stir to combine. Simmer on low heat for 20 minutes, or until lentils are tender.

  3. 3

    Place all ingredients in blender and blend for about 4-5 minutes

    Grab a spoon and enjoy!
