Ingredients

  1. 1 ¼ cupsAll-purpose flour
  2. 1Egg large
  3. ½ cupOlive oil
  4. 3 tbspsCream
  5. ¾ cupZucchini (yellow and green) grated
  6. 1Carrot (grated)
  7. 1Lemon juice
  8. lemon Zest of a
  9. ¼ tspNutmeg
  10. ½ tspAll-spice powder(garam masala)
  11. 1 tspginger Grated
  12. 1 tspSugar
  13. Salt as per taste
  14. 1 tspChili flakes
  15. 1 tspBaking powder
  16. Baking soda ¼ tsp

Steps

  1. 1

    Pre heat the oven at 180 degrees

  2. 2

    Line and grease the loaf pan of 8*5 inch

  3. 3

    Sift together flour, baking powder, baking soda

  4. 4

    In a bowl, beat together oil, sugar and egg till creamy

  5. 5

    Add lemon juice, lemon zest, nutmeg, chili flakes, ginger, salt, all-spice powder, cream and mix well.

  6. 6

    Gradually add flour mixture and mix well with spatula

  7. 7

    Fold grated zucchini and carrot till incorporated well

  8. 8

    Pour this batter in the loaf pan and bake it for 35-40 minutes or till knife comes out clear

  9. 9

    Cool it for few minutes

  10. 10

    Transfer on wire rack and cool completely

  11. 11

    They are ready to serve..
