Ham and Cheese Breakfast Cups

I used what veggies I had on hand, cabbage and onion. This was so good! My 3 almost 4 year old loved these! Hers had no onion or cabbage of course, but she tore it up! I also didn't have the green onion for the top so I used parsley so it would look pretty. :-)

Cooking Instructions

Pre-heat oven to 350°. In a small pan, sauté onions and peppers till tender.

Spray muffin pan with non-stick cooking spray, unless you have one of those good non-stick pans, and place one slice of ham in each making a little cup.

While veggies are cooking, beat together eggs, milk, and salt & pepper.

Add a spoon full of veggies to each cup. Put 1 TBSP of cheese in each then fill ham cup with egg. The egg will also fill outside the ham, but that is fine. It takes about 1/2 an egg for each cup. Top with the chopped green onion tops and bake for 20-25 minutes.

I am big on buying breads and bakery items from the clearance racks. This means I need to use them up fast and that often means scrap pizzas and/or breakfast sandwiches! 🤤👏 I have been low on money and groceries lately and didn't have a lot of meat around. But I did have ham and cheese slices for sandwiches and a few eggs to go with my clearance rack english muffins! 😆👌 Making eggs in the microwave has been a little family trick of ours for decades now. If you've never tried it, I highly recommend this practice on occasion! 😏👍👍 I used a white cheddar cheese but you could use any cheese you like. You could also substitute green onions for any other kind of onions that you have around. Further the sliced ham could be swapped out for any sliced lunch meat that you have or prefer. 🤷🏻♀️👌😎😏👍 Chef Mommy Nessa
