Ingredients

About 30 minutes
4 servings
  • 250 gthick pumpkin purée (excess moisture removed)
  • 65 gbread flour or cake flour
  • 3/8 cupmolasses (grape molasses works especially well)
  • 100 gsemi-solid or solid vegetable shortening
  • 1/2 tspground cardamom
  • 1/4 tspground cinnamon
  • 1 tbspbrewed saffron (optional)

Steps

About 30 minutes
  1. 1

    Combine the flour and shortening in a pan over medium heat. Stir continuously until the flour no longer smells raw but do not let it brown.

    Add the pumpkin purée, cardamom, cinnamon, and brewed saffron. Mix well until everything is evenly combined.

    Add the molasses and continue stirring until the halva comes together and pulls away from the sides of the pan.

    Hold the pan by the handles and gently shake it from side to side to help the halva come together and develop a smooth, even texture.

    Transfer to a serving dish and decorate as desired. Serve warm for the best flavor and texture.

Tips

Molasses can vary in thickness depending on the type and brand. If the halva seems too dry, add a little more molasses. If it seems too soft, cook it a little longer until it reaches the desired consistency.
