Yazdi Cakes are one of Iran's most beloved traditional treats, famous for their delicate aroma of cardamom and rose water, their domed tops, and their signature cracks. There are many variations of this recipe—some are made with yogurt, while others, like this one, use milk. Traditionally, Yazdi Cakes are baked in special molds, but this version makes it easy to enjoy the same wonderful flavors at home.

By the way, yes—we call them "Yazdi Cakes" in Persian, even though they look like cupcakes. Don't ask us why... we've been calling them that for generations! 😄

Ingredients

20 minutes
Makes up to 18 cupcakes
  • 2large eggs
  • 100 gfine granulated sugar
  • 150 gcake flour
  • 100 gneutral oil
  • 50 glukewarm milk
  • 15 grose water
  • 7 gbaking powder
  • 1/2 tspvanilla powder
  • 1/2 tspground cardamom (I used 8 drops of cardamom extract.)

    Whisk all the ingredients together until the batter is smooth and well combined.

    Fill the paper liners, leaving about 1 cm (½ inch) of space at the top.

    Lightly grease a knife and cut a + on top of each cupcake to help create its signature crack. Sprinkle with sesame seeds.

    Bake in a preheated 210°C (410°F) oven for 10 minutes to help the cakes develop their signature domed tops. (I baked mine at 230°C (445°F) for the first 10 minutes.) Then reduce the temperature to 180°C (355°F) and bake for about 10 more minutes, or until cooked through. The total baking time may vary depending on your oven. If your oven has a fan, use the fan setting.
