Paniyaram or Appe made with sprouted Moth Beans by me are an excellent option for a healthy Breakfast on any given day. These are also called as Paddu or Appam. They are Known by several names and are an excellent option for a healthy snacking too. These make for an ideal choice for Brunch as well.
Not only that, there are umpteen variations being done with them by using Vegetables to make them a more nutritious and a healthier choice. Spinach, Beetroot, Corn, Carrot etc can be added directly to the batter to make healthy and colourful Paniyaram.

A perfect choice for Breakfast, this can be enjoyed with Coconut, Ginger, Tomato Chutneys or any other of your choice. These taste yum with Idli or Milagai Podi as well. I had served these beautiful looking crisp Paniyaram with simple Tomato Chutney for an excellent family Breakfast this Weekend.

Ingredients

25-30 minutes
6-7 servings
  • 200 gmMoth Beans Sprouts
  • 1/4 cupfresh Fenugreek Greens
  • 1 tspSalt
  • 1/2 tspKashmiri Red Chilli powder
  • 1/4 tspTurmeric powder
  • 1/2 tspCumin powder
  • 1 tbspGram flour
  • 1 tbspRice flour
  • 1/2 cupsour curd
  • 1 tbsptorn Curry leaves
  • 1-2 tbspchopped Coriander Leaves
  • 1/4 cupOil (for making Appe)

Steps

25-30 minutes
  1. 1

    Soak moth beans in clean drinking water overnight for best results. Next day drain the water and wrap them up in a wet towel or muslin cloth and set it aside in a cool and dry kitchen space. Or do it in a sprout maker glass jar as well.

    Grind this sprouted moth beans with a handful of fresh fenugreek leaves or methi to a smooth paste. Also add a tablespoon each of gram and rice flours to it.

    Add sour curd, torn curry leaves, chopped onion, red chilli powder, cumin powder and salt. Mix well and the batter is ready for cooking.

    Heat an appe pan on a low to medium high heat. Add a drop or two of oil in each cavity of the appe pan. Add a spoonful of the paniyaram mix in each cavity.

    Cover and cook on each side for 2 minutes each. Flip over to the other side and add a drop of oil if required. Cook for a minute or two. Remove onto a plate. In this way, do it in batches until the batter is over.

    Serve it piping hot alongside any chutney of your choice. Enjoy!
