Some people add barberries, prunes, herbs, or different spices to the filling, while others keep it simple. This is the version I grew up eating, and it's one of my family's favorites.

Tender cabbage leaves wrapped around a flavorful filling of rice, split peas, ground beef, and dried dill (or a traditional Persian dolmeh herb mixture), then gently simmered in a light tomato and vinegar sauce. The vinegar helps balance the cabbage's natural sweetness and gives the dish its delicious tang.

Ingredients

  • 1medium green cabbage (about 1–1.2 kg)
  • 150 grice (short-grain or long-grain)
  • 300 gground beef
  • 1large onion, finely chopped
  • 100 gsplit peas
  • 15 gdried dill
  • 2 tbsptomato paste
  • 1/4 cupvinegar, for boiling the cabbage leaves (I used grape vinegar.)
  • 3 tbspvinegar or lemon juice, for cooking the cabbage rolls (I used apple cider vinegar.)
  • Salt, to taste
  • 1/2 tspground black pepper
  • 1 tspground turmeric
  • as neededOil

Steps

    Cook the split peas in a small amount of salted water until tender but not mushy.

    Cook the rice with a little salted water until the water has been absorbed and the rice is partially cooked. Do not steam it.

    Heat 3 tablespoons of oil in a pan and sauté the onion until lightly golden. Add the ground beef and cook until browned. Stir in the turmeric, black pepper, and salt, then cook for another minute.

    Mix in the dried dill, cooked rice, and split peas. Set the filling aside.

    Remove any damaged outer cabbage leaves and wash the cabbage. Using a knife, cut around and remove the tough core from the bottom, as shown in the photos. Place the whole cabbage in boiling water with the vinegar and cook until the leaves soften and can be separated easily.

    Trim the thickest part of the center vein from each cabbage leaf so it becomes more flexible and easier to roll, as shown in the photos.

    Line the bottom of a pot with cabbage leaves or potato slices to prevent the first layer of cabbage rolls from burning.

    Place some filling in the center of each leaf and roll tightly, folding in the sides as shown in the step-by-step photos.

    Arrange each stuffed cabbage roll neatly in the pot as you make it.

    In a small pan, sauté the tomato paste with 1 tablespoon of oil. Add the vinegar, a little salt, and some water to make a light sauce.

    Pour it over the cabbage rolls. Place a heatproof plate upside down over the cabbage rolls and weigh it down with a heavy object to keep the rolls from opening during cooking. (I used a small pot filled with water.)

    If needed, add more water until it reaches about the level shown in the photos. Bring to a boil, then reduce the heat to low and simmer gently until fully cooked. If they need a little longer to cook, that's perfectly fine. Continue cooking until most of the liquid has been absorbed.

Tips

Cabbages with green leaves are better for this recipe than those with yellowish leaves.

Since cabbage has a naturally mild sweetness, vinegar or lemon juice is added to balance the flavor and reduce its sweetness. Feel free to increase the amount to suit your taste.
