Pre-heat the oven to 180°C, and line a square baking tin with greaseproof paper.

In a large bowl, cream together the butter/spread and caster sugar, then beat in the eggs and vanilla extract.

Sift in both flours and the cocoa powder, then gently fold through with the chocolate chips.

Fold through the melted chocolate until everything is smooth and equally combined.

Pour the batter into the baking tin, spread out with the back of a wooden spoon or spatula, then bake for 25 minutes, or until the brownies are mostly set, with a slight wobble in the middle.

Leave to cook in the tin for 30 minutes, before carefully removing from the tin and finishing the cooling process on a wire rack before cutting.
Tips
- For gluten free brownies, substitute the flours for gluten free alternatives. I use gluten free self-raising flour which contains xanthan gum, but if your flour doesn't contain xanthan gum, just mix 1/4 tsp into the flour <3
