OK Today I am only doing one Batch but this is super easy and cost effective to batch cook and Freeze then Thaw and bang under the Grill for a perfect Mid week tea or watching the game with a beer. (if freinds come round you might need 2-4 packs on standby) Tonight I making Sweet and Spicy but you can add you own rubs / Marinades and even do many different ones at the same time. These will become a family favourite - ENJOY

Ingredients

3 Min Prep 24 hours sous Vide and 10 mins :P
1 Rack-easy to do as many al fit in container.
  • 1 RackPork Ribs
  • 1 Tbspfavourite rub (or sauce)
  • 1 TbspDark brown Sugar (optional)
  • 1 TspCayenne Pepper or chilli powder (Optional but today we going SPICY)
  • 1 TspLiquid Smoke (again Optional but I love the BBQ taste - WITHOUT the clean up) :P
  • To Serve:
  • 1Red and 1 Green Chilli Finely Chopped (Optional)
  • 1Spring Onion Finely Chopped (Optnioal)

Steps

3 Min Prep 24 hours sous Vide and 10 mins :P
  1. 1

    Trim your Slab of ribs of any excess fat and remove the membrain on the back of the bones (Just start at edge and pull with a piece of kitchen paper if lucky get off in one pc :P)

    Cover with all the other ingrediants and rub in. Then put into vacuum bag and seal (Or use water immersion Method) Place in water bath and set temp to 74c and cook for 24 hours for the meat to fall off the bone. (or 63c for juicy more firm ribs). You can now batch Freeze once cooled if required.

    Remove bag from water then cut a small hole in the corner and drain the juices into a small pan. Transfer the Ribs to a foil lined baking sheet.

    Heat the Juices to reduce the luquid I add a little more sugar and Cayenne or Hot Sauce and a little more Liquid smoke. You want to simmer until thickens to a light syrup consistancy. Brush or pour over the Ribs and put under the Grill on High until Hot and amazing Glazed.

    Serve with a sprinkle of Spring onions and ENJOY :P

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
