Wash the dal
Rinse the urad dal 2–3 times until the water runs relatively clear.

Soak
Soak the dal in about 3 times its volume of water for 4–5 hours at room temperature.

Drain completely
Drain the soaked dal thoroughly and leave it in a strainer for about 15 minutes.
This is important for crisp pakode.

Grind thick
Grind the dal using only 1–2 tbsp water, adding more only if absolutely necessary.
The batter should be thick like idli batter, not thin like dosa batter.

Beat the batter — the winning step!
Transfer the batter to a bowl and beat it vigorously with your hand or a whisk for 4–5 minutes in one direction.
This incorporates air and makes the pakode light and fluffy.
Optional float test: Drop a tiny amount of batter into water. If it floats, the batter is nicely aerated and ready.

Add the flavours
Add cumin powder, black pepper, turmeric and salt.
Then add chopped onion, green chillies, curry leaves and coriander.
Mix gently without knocking out too much air from the batter.

Fry
Heat oil over medium heat.
Drop small spoonfuls of batter into the hot oil and fry on medium-low heat, turning occasionally, until golden brown and crisp.
This takes approximately 7–8 minutes, depending on the size.
Avoid high heat—the outside may brown quickly while the inside remains undercooked.

Drain on a kitchen towel and serve hot with your favourite chutney and a steaming cup of tea or coffee. ☕️
