Loaded Mexican-Style Chips (Intended Low FODMAP)

Likely low FODMAP when:
- 3/8ths of avocado used for the guacamole (sorbitol). (This means a small amount of guacamole, so might not be worth including. If sorbitol isn't a trigger, use full avocado).

Notes:

Ingredients

  • Chips
  • 2baking potatoes (white)
  • Mince
  • 250 gminced beef
  • 1tomato (common - golf ball sized ish/ ~60g)
  • handfuljalapeños
  • handfulcheddar cheese
  • Guacamole
  • 1avocado
  • dashlemon juice
  • Seasonings
  • dashcoriander
  • dashcumin
  • dashblack pepper (ground)
  • dashsalt

    Preheat oven to 200C (fan).

  2. 2

    Cut the potatoes (unpeeled) into roughly 1cm diameter chips.

  3. 3

    Line the baking tray with foil, then splash a little oil in before throwing in the cut chips.

  4. 4

    Season the chips with salt, pepper, cumin (or preference) and jumble about in the baking tray to ensure good coverage.

  5. 5

    Put chips into oven for 25 minutes.

  6. 6

    Dice an avocado in a bowl and apply a splash of cooking oil and lemon juice, as well as a dash of coriander. *(3/8ths Avocado is low FODMAP. Read description)*

  7. 7

    Mush the mixture with a fork until a guacamole texture is achieved. Put to one side - the oil and lemon juice assist in preventing browning whilst the rest of the meal is prepared.

    Lightly oil a saucepan and throw in the seasonings: cumin, coriander, ground black pepper, salt. Then, begin heating the pan on a medium heat.

    Take 250g of minced beef and place into the pan. Break the mince up and stir well into the released seasonings.

  10. 10

    Dice a common tomato roughly into little cubes and mix into the mince once theres more browning visible than rawness (of the mince).

  11. 11

    Once the minced is fully cooked and browned, mix in a handful of jalapeños and turn off the heat to the saucepan.

  12. 12

    Throw a handful of grated cheddar cheese on top of the mixture whilst still in the pan to melt the cheese.

  13. 13

    Once the chips are cooked, dish up onto a plate and layer the mince on top.

  14. 14

    Place the guacamole on the side to finish.
