1 cupsalted butter (room temperature)
1 1/3 cupswhite sugar
1large egg
2 teaspoonsvanilla extract
1/4 teaspoonpink food colouring
2 1/2 cupsall-purpose flour (spooned and leveled)

Preheat oven to 350°F and line baking sheets with parchment paper.

In a large bowl cream butter and sugar together until light and fluffy. This usually takes a good 5 minutes.

Add in the egg, food colouring, and vanilla extract and mix till well combined. You may have to add more food colouring to get your desired colour of pink depending on the brand of dye you're using.

In a separate bowl whisk together flour, baking soda, baking powder, and salt.

Add the dry ingredients to the wet and mix till well combined.

Fold in the white chocolate chips.

Scoop out 3 tbsp worth for dough and shape into a ball. Place on the baking sheet 2 inches apart.

Bake for 11-12 minutes or until cookies are just starting to turn brown on the bottom. Top the hot cookies with extra white chocolate chips.

Let cool on the baking sheet before moving. The cookies may look a little under done but will continue to cook on the hot pan and stiffen up.
