Crispy-Edged Ground Beef Tacos with Quick Lime Onions

Most weeknight tacos taste flat because the beef is steamed, not browned. The fix is a hot cast-iron pan, small batches and patience: let the meat sit untouched until it forms a dark crust before breaking it up. That browning (the Maillard reaction) builds the deep, savory flavor that a packet of seasoning never will.

Steps
- 1
Make the lime onions first. Mix the diced red onion with lime juice and a pinch of salt. Set aside. In 20 minutes the onion softens and loses its harsh bite.
- 2
Mix the spices. Combine chili powder, cumin, paprika and oregano in a small bowl so you can add them all at once.
- 3
Heat the pan. Put a large cast-iron skillet over medium-high heat for 3 minutes. Add the oil and wait until it shimmers.
- 4
Brown the beef in one layer. Add the beef and press it flat with a spatula. Sprinkle with the salt. Do not stir for 4–5 minutes. You want a deep brown crust underneath. If your pan is small, cook in two batches; crowding releases water and the meat will steam.
- 5
Break it up. Flip in sections and break into small crumbles. Cook 2 more minutes until no pink remains. If there's a lot of fat, spoon off all but about 1 tablespoon.
- 6
Add aromatics. Push the beef to the side, add the diced onion to the cleared space and cook 3 minutes until soft. Add the garlic and cook 30 seconds.
- 7
Bloom the spices. Add the spice mix and tomato paste. Stir for 1 minute — frying spices in fat releases much more aroma than adding them to liquid.
- 8
Deglaze. Pour in the water or stock and scrape the brown bits from the bottom. Simmer 3–4 minutes until the liquid is almost gone and the beef is glossy, not soupy.
- 9
Finish. Turn off the heat, squeeze in the lime juice and taste. Adjust salt.
- 10
Warm the tortillas. Heat them one by one in a dry pan for about 30 seconds per side until soft and slightly charred. Stack them in a clean towel to keep warm. Double them up if they're thin.
- 11
Assemble. Fill each tortilla with beef, top with lime onions, cilantro and salsa. Serve with lime wedges.
Tips
Tips: Use 15–20% fat beef for best browning. Crispy edges trick: after deglazing, spread the beef flat again and leave it 2 minutes over high heat. Keeps 3 days in the fridge; reheat in a hot pan. Works with ground chicken or turkey too. Printable version and variations: skilletglow.com/easy-ground-beef-tacos/
