Fried plantain and sausage sauce is a very simple recipe that can be taken with tea as breakfast. I believe this recipe is known globally and not restricted to a set of people.

After peeling and slicing your plantain, you start frying. while doing that, you chop your tomatoes, onions, pepper and set aside.

You chop your sausage and your green pepper separately

Once you are done with the plantain, you get another pot for the sauce. Put on fire, fry your chopped ingredients. while doing that you add your maggi and curry, it shouldn't be too dry, you break and whisk your eggs, then add both the eggs, chopped sausage,carrot and green pepper at the same time, add just a pinch of salt to taste allow to simmer for 1-2 minutes then put down.

Ready to be served with your fried plantain. Enjoy.
