An easy and delicious apple cake from my mother that fills the house with a wonderful aroma every time I make it! I've tried many apple cakes, but this one has become my favorite treat to enjoy with my afternoon coffee.
A few more tips:

Steps
- 1
Beat the sugar and butter together until smooth (for convenience, I melted the butter).
- 2
Add the eggs, then gradually add the flour. Finally, add the brandy, vanilla, and baking powder. The batter will be a bit thick, but don't worry.
- 3
Peel and slice the apples—not too thin, but not too thick either. I personally like them a bit thicker so you can really taste the apple in the cake.
- 4
Place the apple slices in a nonstick skillet, sprinkle with 3 tablespoons sugar and cinnamon. Stir constantly until the apples soften and the sugar turns syrupy. Then gently fold the apples into the batter so they're evenly distributed.
- 5
Pour the mixture into a buttered baking pan and bake at 350°F (175°C) for 50 minutes.
- 6
If you like, you can sprinkle powdered sugar on top after it cools. I didn't add any.
