Sterilize the jars that you are going to use by placing them in a preheated oven at 100°C for 20 minutes. Peel and decore the pears then place them in a pot with very little water and lemon juice (after you cut them into small pieces) over moderate heatuntil they are tender.

Strain and add the sugar, 4-5 tbsp water, a little lemon juice and the cinnamon.

Place once more over strong heat until the sugar melts, the pears dissolve and the jam sets, while stirring from time to time so that it doesn't stick to the bottom of the pot!

Store in the jars while hot, close the lid and turn upside down! Allow to cool and then store the jars in the fridge.
