Ingredients

  • 3potatoes, quartered 
  • 3carrots in round slices
  • 1large onion finely chopped
  • 1 sprigleaf celery cut into pieces 
  • olive oil 
  • salt and pepper 
  • 1/2freshly squeezed lemon

Steps

  1. 1

    Pour some olive oil in a small pot, just as much as is needed to cover the bottom. 

  2. 2

    Add the potatoes, the carrots, the onion and the leaf celery. 

  3. 3

    Cover with water. 

  4. 4

    Add the rest of the ingredients and after they boil for a couple of minutes, simmer until the vegetables are tender.
