Ingredients

45 -50 minutes
8 servings
  1. 2eggs
  2. 5.5tsps low cal syrup
  3. 1/2 cupveg oil or coconut oil
  4. 1 tspvanilla extract
  5. 2 tbspmilk
  6. 3ripe bananas, mashed
  7. 1 2/3 cupwhole wheat flour
  8. 1/4 tspsalt
  9. 1/2 tspcinnamon
  10. 1 tspbicarbonate of soda

Steps

45 -50 minutes
  1. 1

    Preheat oven to 180 degrees on conventional or 160 degrees fan forced. Line a loaf pan and set aside.

  2. 2

    Beat eggs and syrup together with a hand electric mixer for approximately 3 minutes.

  3. 3

    Add in oil. Beat until mix thoroughly. Mix in milk and vanilla with the electric mixer. Add in mashed banana and mix.

  4. 4

    Sift together the flour, salt, bicarbonate of soda and cinnamon together in a large bowl.

  5. 5

    Pour the wet mixture into the dry mixture. Fold gently with a wooden spoon until mixed thoroughly.

  6. 6

    Pour mixture into the prepared pan and bake for 45-50mins or until a skewer inserted comes out clean

  7. 7

    Cool in pan for 10 minutes then tur. Onto wire cooling rack to cool completely.
