Bring the water to boil in the cooking pan add a pinch of salt and a teaspoon of oil.Now add the spaghetti.Let it boil for 10-12 minutes.

Take the spinach blanch it in hot water with a pinch of salt for a few minutes till cooked.Then blend it.Drain the excess waterSqueeze the lemon juice on the blended spinach in a bowl and mix.

Put a tablespoon of oil on the cooking pan.Add the chopped onion let them brown,add the diced green pepper and tomato stir for a while.

Then add the cooked spaghetti and stir for a while.

Cut the avocado in half.Peel and cut into slices.Chop the coriander finely.

Serve the vegie spaghetti, scoop the pureed lemon spinach and put it at the centre.Arrange the avocado around and sprinkle the coriander.

Can be served with Roast Chicken/Braised beef.
