Ingredients

  1. 1 lbpackage boneless/skinless chicken breast (about 3 cups cooked chicken chunks)
  2. 1 tspground pepper
  3. 1/2 cupchopped pecans or walnuts
  4. 2 tbspcrystallized ginger, finely minced (optional)
  5. 1/3 cupmayonnaise regular or light
  6. 1/3 cupbuttermilk
  7. 1/4 tspsalt (optional)
  8. 1/4 tspground pepper
  9. 2 tspitalian style seasoning (I use Tuscan Sunset by Penzeys)

Steps

  1. 1

    If using raw chicken, simmer in water with pepper for 20 minutes until cooked through, or season with pepper and bake at 325°F for 25 minutes.

    Let cool and then chop. Place in a serving bowl with the pecans and ginger.

  3. 3

    In a separate bowl, combine the mayonnaise, buttermilk, pepper, salt (if using), and Italian style seasoning

  4. 4

    Pour over the chicken mixture and stir to coat.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
