30 mins
  • 1 quartegg yolks
  • 100 gramsbutter
  • 6 cupsimple syrup
  • 6 cupegg whites
  • 2500 grams56% chocolate
  • 1 gallonheavy cream

Steps

30 mins
  1. 1

    melt chocolate and butter together

  2. 2

    whisk egg yolks till fluffy

  3. 3

    add hot simple syrup to yolks, whisk until foamy

  4. 4

    in a large bowl, mix yolk batch with melted chocolate, mix until evenly combined

  5. 5

    whisk cream to eagles peak, and add to chocolate mix

  6. 6

    whisk egg whites to soft peak and add to chocolate mixture

  7. 7

    yeilds about 8-10 gallons
