I was sure I'd already added this recipe as I make them so often! Kind of like my fried eggplant recipe, creamy on the inside and crispy on the outside. Please try them, they're gorgeous!

Cooking Instructions

Preheat oven to gas 6 / 200C / 400°F and place a wire rack over a baking tray

Halve the avocados and remove the stone, then slice each half lengthways into 4

Now remove the skins with the knife
- 4
In one bowl put the flour. In another some milk. In a 3rd bowl mix the other ingredients together

Dredge the avocado slices in the flour, then milk, then seasoned breadcrumbs and place on the wire rack
- 6
When all are done give them a light spray with cooking oil and put them in the oven to bake, turning once halfway through, for 20 minutes or until the crumb is golden

Let rest and cool for 10 minutes then serve with a nice dipping sauce such as ranch or sweet chilli. These really go with anything so whatever you like!
