Preheat the oven to 175C.

Melt the butter in a saucepan. Grind the saffron with a bit of the sugar, then mix the saffron sugar with the melted butter. Pour the mixture into a bowl and let it cool. Then stir in the eggs and sugar.

Mix the flour with the baking soda.

Chop the almonds.

Now pour the choped almonds and the flour mixture in to the batter and work it in to a dough.

Divide the dough into 4 equal pieces. Roll each piece into a length of about 40 cm long. Place tem on baking sheet and bake in the center of the oven for about 15 min.

Then let them cool slightly.

Lower the teperature of the oven to 100C.

Cut every length in to about 10 "crooked" pieces and put the back on the baking sheet, cut side up.

Dry the biscotti in te center of the oven for approx. 1 hour or until they feel dry.
