Ingredients

  • 4boneless skinless chicken breast (cubed)
  • 1 largegreen bellpeper(chopped)
  • 1 cupfresh mushroom of choice.(sliced)
  • 1/2 smallonion
  • 2zuccini (cubed)
  • 1salt and pepper to desire taste
  • 2 cupwhite long grain rice
  • 4 cupwater
  • 1 1/2 cupall purpose flour
  • 2 tspseason salt
  • 1/2 cupbrown mustard
  • 1/2 cupstrawberry preserves

Steps

  1. 1

    wash and dry handd.

  2. 2

    in a deep fryer. heat oil to prepare for chicken.

  3. 3

    clean chicken and cut into cubes.

  4. 4

    in large bowl mix flour, salts and pepper. add chicken to flour mixture toss around. till chicken is lightly coated.

  5. 5

    strain excess flour into trash.

  6. 6

    carefully add chicken little at a time. fry til golden.

  7. 7

    meanwhile. gather veggys and boil in water until done.

  8. 8

    in a seperate pan. fill with 2 cups of rice and 4cups water. uncoverd til boil. reduce heat add 2tsp salt 1tsp butter. cover and do not check until 7 minutes.

    when all chickem is fryed. drain excess oil. mix together preservs and mustard. add cicken to coat.

  10. 10

    on plate add rice than chicken than veggies. enjoy
