Ingredients

1 hour
3 servings
  1. 1 boxrotini cooked al dente
  2. 1 tbspolive oil
  3. 1 tspsea salt
  4. 1parmesan cheese
  5. chicken
  6. 3boneless skinless chicken breasts, cut into bite size pieces
  7. 1 tbspminced garlic
  8. 1 tsporegano
  9. 1/2medium onion chopped
  10. 4 ozsliced mushrooms
  11. 1 tspsea salt
  12. sauce
  13. 1/2 lbbacon, diced, reserve drippings
  14. 1/2 cupdry white wine
  15. 3eggs beaten with a little milk
  16. 1 cupheavy cream
  17. 1/2 tspblack pepper
  18. 1chicken bouillon cube
  19. 5large fresh basil leaves chopped

  1. 1

    In a lg frying pan, add all chicken list and saute until chicken is done drain, and set aside

  2. 2

    In a large pot add 2 qt water salt and olive oil. Bring to a boil. Add rotini and cook 9 minutes until al dente

  3. 3

    In the pot that you cooked the noodles in, saute bacon until crispy do not drain

  4. 4

    Add wine and simmer until almost completely reduced

  5. 5

    Add cream, bouillon, pepper and basil to bacon and heat through

  6. 6

    Beat eggs with a little milk. When milk is bubbly remove from heat and slowly add egg mix. Stir constantly

  7. 7

    When sauce thickens mix noodles with sauce. Plate noodles and top with sauteed chicken. Garnish with fresh basil and parmesan cheese

  8. 8

    If you add noodles and the sauce becomes thin. Return to heat and bring to simmer. Noodles will thicken sauce

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
