Italian Meatloaf

Decided one evening to make meatloaf & husband told me we really needed to use our Italian Sausage. So, I made this. My home cooking does follow specific recipe books as well as recipes that I call 'exploring'. Thank Goodness my hubbie doesn't mind being a Guinea Pig! Saying that, this recipe is not exact because I rarely use measuring cups, I totally follow my intuition & cooking skills so I apologize in advance if this does not turn out the way you want!

Ingredients

  • Meat
  • 1 lbGround Italian Sausage
  • 2 lbGround Beef, Chicken, Turkey, Bison...
  • Panade?
  • 1 eachSmall Onion
  • 3 eachLarge Eggs
  • 3/4 cupMilk
  • 1 cupItalian Bread Crumbs
  • 1 pinchea Salt & Pepper
  • 2 tbspDried Parsley

    Preheat oven to 350°.

  2. 2

    Mix together meats. Set aside.

  3. 3

    Mix eggs, milk , bread crumbs, and seasonings. Set aside for a couple minutes so bread crumbs can absorb moisture so it thickens up considerably. You'll know it's ready when you stir it & feel you need to add more milk; DON'T.

  4. 4

    Add Panade to Meat Mixture. You'll most likely want to use your hands for this. When adding Panade, mix small amounts at a time, you may not need all of it. Always depends on meats your using & milk you're using, etc. Throw away any unused Panade.

  5. 5

    When ready to shape loaves, divide mixture into however many loaves you would like. I always use cookie sheets & I hand shape my loaves. If you do this method, make sure your loaves are uniform throughout for better results.

  6. 6

    Cover tightly with aluminum foil. Bake for 45 min. Check with meat thermometer, you want 160°. If not done, cover & continue baking.

  7. 7

    When you're down to last 10 or 15 min baking, take foil off, & top with homemade or store bought marinara. You don't need very much. You don't want to overpower meats.

  8. 8

    Take out of oven & let rest 10 min. Enjoy!

Self-employed Mommy of 2 teens who are opposites of likes/dislikes of food. One child eats like a horse & is typically a bear when it comes to food (absolutely LOVES meat/fish, veggies, & fruit). The other child eats depending on feelings/moods. Some days it's only vegetarian or vegan food. Other days, it's kids food all the way: pizza, waffles, pancakes, chicken nuggets, etc. And then, there are days when food is just not on menu, at which point, I feed only fresh veggies/fruits that are never refused. And like Mommy, we all love fresh bread! Daddy just likes being a guinea pig & the fact that there is always some good leftovers in the fridge!
