Ingredients

  1. 4large potatoes or 4 cups of mashed cooked potatoes
  2. 2/3 cupCottage cheese, creamed in a blender
  3. 3/4 cupsour cream
  4. 1/2 tsponion powder
  5. 2 1/2 tspsalt
  6. 1/8 tspwhite pepper
  7. 2 tbspbutter, melted
  8. 1 cancorn, drained
  9. 1 cupshredded mozzarella cheese
  10. 6 sliceProvalone cheese

30 mins
  1. 1

    Peal potatoes. Cut into chunks. Put in pot & cover with water. Boil until easily pierced with a fork, about 20 minutes. Drain.

  2. 2

    Mash potatoes with a potato masher. Add creamed cottage cheese, sour cream, onion powder, salt, pepper, butter, corn, & mozzarella cheese. Mix well.

  3. 3

    Pour into ungreased 2qt casserole dish. Put slices of Provalone cheese on top.

  4. 4

    Bake in 350°F oven for 30 minutes. Let set for 5 minutes. Serve.
