My mom used to make this for me as a kid. I included bacon in the recipe, as that's how I used to eat it as a kid, but I didn't include it in the picture as I gave up pork over a year ago.

Ingredients

  1. 1 cupspinach
  2. 1 cupromaine lettuce
  3. 1/2 cup celery
  4. 1/4 cuppeas
  5. 1/4 cupsharp cheddar
  6. 1/4 cupgreen pepper
  7. 8 slicecucumber
  8. 4 tbspchipotle mayonaisse
  9. 1 slicebacon

Cooking Instructions

    Wash all veggies. With exception of spinach and lettuce, cut all into 1/4" wide chunks.

    Shred lettuce and spinach. Place on bottom, on plate. Cover with chipotle mayo, and spread evenly.

    Next layer cucumber, peas, and green pepper. Top with cheddar, evenly spread.

    On top, sprinkle celery. Dice bacon, and use for garnish.
