My fiance is on a no iodine and dairy diet for two weeks before radiation so I took a Martha Stewart recipe and changed it enough to make it mine. Feel free to salt or other seasoning though I'm rather happy with the outcome. As was she.
Cooking Instructions

In a large skillet, heat half of the oil over medium heat.

Using half the ground pepper, season chops and put into hot oil. Sear for 3 minutes on each side.

Meanwhile, Boil potatoes in water until soft.

Remove chops and put apples and onions in skillet. Sautee for 15 minutes, stirring occasionally.

When onions are translucent, add white and deglaze pan. Add chops, making sure they are covered with apple mixture. Keep on medium heat for 15 minutes, turning chops after 8 minutes.

When potatoes are soft, remove from heat and drain. Add remaining oil and ground pepper and mash till you get the texture you desire.

On a plate, put a helping of potatoes. Cover with a spoonful of mixture. Then then chop and cover with more mixture and enjoy.
