I've been saving and freezing all my veggie scraps from cooking preparation for the past couple of months. Instead of throwing to the garbage the carrot & onion peels or bell pepper & zucchini stems, I put them in a large ziploc bag in my freezer. When the bag is full, or when you have no more room in your freezer because you've cumulated too many ziploc bags, it's time to make your broth! 😄😄 All veggie scraps are good to go in except for potato peels. Of course you, have to wash thoroughly your veggies if you want to do this, even if you eat organic.

Ingredients

  • 1part veggie scraps
  • 2part water

Steps

  1. 1

    Put the veggie scraps and the water into large pot.

  2. 2

    Cover and bring to boil.

  3. 3

    Reduce heat and simmer for an hour.

  4. 4

    Let cool down before filtering through colander.

  5. 5

    Save in 1 liter containers for later use. Can be frozen or kept in fridge for 1 week.
