Ingredients

  1. 3 lbred potatoes; quartered
  2. 1 cupranch dressing
  3. 1 packagesapplewood bacon
  4. 1 1/2 tbsprosemary; minced
  5. 1 tbsponion powder
  6. 1 tbspgarlic powder
  7. 1 tbsppaprika
  8. 2 tspthyme; minced
  9. 2 tspground white pepper
  10. 2 pinchsalt
  11. 1vegetable oil; as needed

Cooking Instructions

    Place bacon on a sheet tray. Bake at 350° for approximately 20-25 minutes or until bacon is crispy and fat is rendered.

    Remove bacon from tray and dice into medium bite sized pieces. Set aside.

    Toss potatoes with enough bacon fat to cover. Add oil only if necessary. Season with dried spices.

    Roast at 400° for approximately 40-45 minutes or until potatoes are caramelized and fork tender. Shake baking tray a few times during cooking to move around potatoes for more even caramelization.

    Place potatoes in a large mixing bowl. Toss with ranch and most of the bacon. Garnish with remaining bacon.
