Fried Whitebait

Whitebait are a great little starter dish with fantastic flavour but minimalist effort to make. I myself prefer the smaller whitebait as they tend to be much more crunchier and tastier.

Whitebait are a great little starter dish with fantastic flavour but minimalist effort to make. I myself prefer the smaller whitebait as they tend to be much more crunchier and tastier.

Wash and prepare the whitebait. Dab with kitchen roll to remove any excess water and place in a bowl.

Sprinkle with salt, add as much as you prefer. Leave in the fridge for 30+ minutes to absorb some of the salt.

In a shallow bowl add a good amount of flour.

You can deep fry the whitebait however I chose to do mine in a shallow fry. So if shallow frying pour about 200-300 ml of oil into a frying pan and heat on a medium to high heat.

Coat the fish evenly in the flour and carefully drop into the hot oil as you go along.

Fry for 4-5 minutes on each side.

Dab with kitchen roll to absorb some of the oil.

Optional: sprinkle with the fish with the lemon juice, serve with mayonnaise.

Serve almost immediately. It's great as a starter.
