Ingredients

30 mins
3 servings
  • 300 gramsof mouth full size slices
  • 1 cupof chicken stock
  • 1/2 cupof coconut milk
  • 2 slicethai red chilies
  • 2 sliceof each galanga and lemon grass
  • 2coriander with roots cut and separate
  • 2half cut shallots
  • 2green onion cut 2 cm long
  • 6cherry tomatoes cut in half
  • 2 tbspspoon of chillies paste oil
  • 1juice of half lime
  • 1 tbspspoon of fish sauce
  • 1 tspspoon of chicken stock powder

Steps

30 mins
  1. 1

    In the medium high heat add chicken stock in the pot then add galanga, lemon grass, chillies, shallots and coriander roots. Let's boil till get the herbs smell

  2. 2

    Add chicken and let's boil again for 8 minutes then add coconut milk

  3. 3

    Add tomatoes, chopped coriander and green onion in the pot stir just enough to soften tomatoes

  4. 4

    Add chicken stock powder, fish sauce and lime juice stir gently

  5. 5

    Add chillies paste oil into the soup to make it becomes oily redish on the surface
