Ingredients

  • 4 cupfresh or frozen berries
  • 1 cupalmond flour
  • 1/4 cupginger bits or crystallized ginger (this is available at Penzey's Spices)
  • 1/4 cupcoconut oil or butter
  • 1 tsppure vanilla extract
  • 1maple syrup to taste (2 tablespoons is suggested)
  • 1whipped cream or ice cream, optional

Steps

    Preheat oven to 375°.

  2. 2

    Grease an 8 X 8 inch baking dish.

  3. 3

    Place the berries and the ginger in the baking dish.

  4. 4

    In a mixing bowl, combine the flour, oil or butter, vanilla and syrup and mix until crumbly.

  5. 5

    Sprinkle the topping over the berries.

  6. 6

    Bake for 30 to 40 minutes, until slightly browned.

  7. 7

    Serve warm with whipped cream or ice cream if desired.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
