I wanted a fun and easy way to use up some Thanksgiving leftovers. Voila!

If it is chicken, turkey, ham, pork or roast beef, there is always the question what do you do with the leftovers. One of the things that I choose to do is make a pot pie. Super easy super quick and delicious it is always a homerun regardless of what meat do you use.

I LOVE to mix things up in my kitchen. This recipe came about one night when I was thinking how I can remake my thanksgiving leftovers. Staring in my fridge I saw my left over turkey, small ball of leftover pie crust dough, and pumpkin pie. I also have this awesome left over toasted spice rub mix I had used on some butternut sqush, why not pair it with pumpkin? So I thought, pot pie!, and who doesn't love a good pot pie. Using the turkey and some other fresh ingredients I had, bam! , I had just whipped up this amazingly flavorful pie with a beautiful complimentry nutty flavor of pumpkin and spice. Was a complete hit in my house, and I hope it will be at yours too.Left overs are great for a pot pie. This idea can be used and transformed with just about anything you may have left over! If I didn't have leftover pie crust dough, I probably would have used stuffing or mashed potatoes.

Here's another Thanksgiving leftover recipe. If you have leftover roasted squash, then use them and eliminate step two. The Alfredo and squash give this pot pie a unique creamy flavor and texture. Not your average pot pie!!

This is the first time I've attempted making a pot pie like this, and it turned out very yummy! And it's super easy to make!

Just had some leftover Turkey I bagged up and froze on Thanksgiving and I decide to make this dish for supper tonight ☺

I'm always working on new ways to get rid of holiday leftovers and this was a perfect way to use up that thanksgiving turkey!

I threw this together after seeing so many "easy" pot pie recipes that had way too many ingredients. This looks elegant and tastes great !

This has been a fan favorite for my husband and family for a long time. Its super easy to make and tastes just like marie calendars!

One year I thought I'd try something different with the leftover Thanksgiving turkey. So after reading various pot pie recipes and consulting with my grandmother, I took all the ingredients I liked, added some of my own touches and created this recipe over 10 years ago. I make this the Sunday after every Thanksgiving and its in high demand. I also save some of the leftover turkey to make turkey street tacos too. That's on Tuesdays :)
