I made this originally for my dad for his birthday. I thought it would be perfect for a birthday breakfast. Everyone enjoyed it and it filled our bellies! It was so good i thought id share.

Wild Bills Breakfast

I made this originally for my dad for his birthday. I thought it would be perfect for a birthday breakfast. Everyone enjoyed it and it filled our bellies! It was so good i thought id share.

Ingredients

  1. 10large eggs
  2. 3potatoes
  3. dashgarlic salt
  4. dashsalt
  5. dashblack pepper
  6. 1 packagesbacon
  7. olive oil
  8. 1/2 packagescolby jack cheese (optional)

Cooking Instructions

    Preheat oven 350°

    Spray glass casserole dish with non stick spray and place the dish in the oven to warm up

  3. 3

    Put olive oil in a frying pan to preheat for the potatoes

  4. 4

    As oil preheats, wash potatoes.

    Chop washed potatoes into small cubes

  6. 6

    Place chopped potatoes in olive oil to fry and add some garlic salt to potatoes

  7. 7

    As potatoes fry, cook the entire package of bacon in separate pan

  8. 8

    Place cooked bacon on paper towel to absorb grease

  9. 9

    Once all bacon is cooked set aside to cool

    Once potatoes are fried place in the casserole dish and put back in the oven to continue to cook (potatoes should be soft and able to put fork in without trouble)

    Whisk eggs together in a bowl and add garlic salt, salt, and pepper

  12. 12

    Place cooked bacon on cutting board and chop into fine bits

  13. 13

    Add chopped bacon to the eggs and mix them together

  14. 14

    Pour the egg and bacon mixture into the casserole dish with the potatoes

  15. 15

    Cook in oven for 15-20 mins or until eggs are fluffy

  16. 16

    If you choose to use cheese, shred cheese and sprinkle it on top of the eggs 2 min before the cook time is up to melt

  17. 17

    Let cool for 5-8 min and ENJOY
