Ingredients

  • 1/4 lbpork (thinly sliced)
  • 2 piecetomatoes (large)
  • 1 tbspginger (minced)
  • 1 mediumonion, chopped
  • 3 clovegarlic, crushed or chopped
  • 4 tbspshrimp paste
  • 1 cupshrimps
  • 1/4 mediumsquash / pumpkin (cubed)
  • 1 bunchstring beans (cut into 3 inch pieces)
  • 1 mediumeggplant, sliced
  • 6 pieceokra
  • 3 tbspcooking oil
  • 1 cupwater
  • tspsalt
  • pinchpepper

Steps

  1. 1

    Heat oil in a big pan

  2. 2

    Sauté garlic, onion, ginger, and tomatoes.

  3. 3

    Add pork and cook until brownish

  4. 4

    Put in shrimp paste and the shrimp. Cook for 2 minutes

  5. 5

    Add water and simmer for 10-15 minutes or until pork is tender. Add a dash of salt and pepper.

  6. 6

    Add the squash. After 5-7 minutes, add the eggplant.

  7. 7

    Add the remaining vegetables. Season with a bit of salt. Do not overcook.

  8. 8

    Serve with steamed rice. Enjoy! :)
