Creamy Potato Soup

Ingredients

  1. 6bacon strips, diced
  2. 3 cupcubed peeled potatoes (about 3 medium)
  3. 1 can14 1/2 oz chicken broth
  4. 1/3 cupgrated carrots
  5. 1/2 cupchopped onion
  6. 1 tbspparsley flakes
  7. 1/2 tspeach celery seed, salt, & pepper
  8. 3 tbspall-purpose flour
  9. 3 cupmilk
  10. 8 ozvelveeta cheese, shredded or cubed
  11. 2green onions, thinly sliced (optional)

Cooking Instructions

    In large sauce pan, cook bacon until crisp, drain. Same pot add potatoes, broth, carrots, onion, parsley, celery seed, salt and pepper.

    Cover and simmer until potatoes are tender, about 20 minutes on medium heat.

    Combine flour and milk, slowly until smooth; add to soup. Bring to boil and stir for 2 minutes.

    Add cheese, stir until melted and soup is heated through.

    Garnish with green onions. (Optional)
