Ingredients

  • 2 canMandarin oranges
  • 1 boxyellow cake mix
  • 1egg beaten
  • 1/4 cupoil
  • 1 packagessmall Cool whip
  • 1 boxinstant vanilla pudding
  • 1 can(small)crushed pineapple drained

Steps

  1. 1

    Dump Mandarin oranges with juice in large bowl with cake mix, egg and oil. Mix well with a spoon. Pour into prepared pan.

  2. 2

    Preheat oven to 350°F. Grease 13" x 9" pan with cooking spray.

  3. 3

    Bake according to package directions. (Approximately 25-30 minutes. )

  4. 4

    Cake is done when fork placed in center comes out clean. Let cake cool completely.

  5. 5

    While cake is cooling, combine Cool whip, pudding mix and crushed pineapple in a medium bowl. Once cake is cooled, place topping over cake evenly.

  6. 6

    Store remaining cake in refrigerator.
