1 cupapricot or seedless raspberry jam
1 tbspwater

remove from heat.

bring jam and water to boil in small saucepan.

cool before using.

spread over cake and let stand about 1 hour before frosting.

NOTE: use apricot jam if the cake is being covered by a light frosting. the raspberry jam is particularly good with chocolate cake and frosting.
