Cook rice according to the directions on the package.

Once soft add curry, turmeric, cumin, and garlic. Saute for another minute.

Add eggplant, sea salt and pepper to taste. Cook over medium heat and cover, stirring occasionally while mashing and cooking.

continue cooking over medium heat until eggplant is a creamy in texture.

Once finished, serve with brown rice.
